I've had this problem for some time. Mine tends to not register my speed for a while then will jump straight up to whatever speed I'm doing at the time! At first I was blaming the speed sensor in the diff but I have found that if I flick the dash with my finger when the speedo isn't working it will jump into life - so it's something in the dash that must be playing up. Also it is sometimes quite erratic and just does a jump up and down while I'm stationary!
