OEM Amplifier stuff
Does the OEM Amplifier just send power to the speakers and head unit or does it control other units in the car? IF you disconnect the OEM Amplifier (both plugs) and hook a new head unit to just the wires that were originaly on the factory unit will it work???

You can use a different head unit with the OE amplifier but be careful not to overdrive it's inputs with a higher power HU.
The factory amp also contains crossovers for the various woofers, tweeters etc. If you also eliminate the factory amp. be sure to protect the smaller speakers from the bass.
