Hi Am I right in thinking that E36 wheels will fit an E34 with the use of spacers? If so, what size spacers would you need?

no worries, they won't pop off :-\
you need 15-20mm spacers,and longer screws.
Too far spaced. Unless they are EXTREMELY well priced, don't try it.
takes about a inch of spacer which will almost definetly give you a eternal shimmey, some people have pulled it off but most don't and give up
