Granny Smith would work but I used Macintosh. I just used one of those vegematic type devices to quickly shred it, and added to the pancake batter.
(and I did not remove the peel)

My wife asked, "what did you put in these pancakes?"
I won a few points for them.

I heard in 2000 you could could vote 7 or 8 times if you were a Democrat living in East St Louis, MO.
