Should I buy a stock fuel pressure regulator for my m20 or should i get one of the fancy ones I see on ebay? What's the deal with those things?

Unless your going for the eye candy, there's not much point in going for a fancy FPR. They advertise the higher pressure to increase your performance, but on engines with a closed loop system, the O2 sensor will feed back to the ECU that its running rich and the ECU will just shorten the squirt to bring it back anyway.

Some people say they notice a slightly better response, but I'd be skeptical of even this.
OEM fits right in without a hassle / aftermarket may be cheaper and look good, but often involves modifications and some extra hassle to make it work.
Your choice.

As the ebay one is adjustable, you also need a pressure gauge to set it up to the correct pressure. More outlay. But if you want the bling factor, go for the adjustable one and build a pod for a cockpit mounted gauge:D

Get a stock one. Running the wrong FP will just screw up your performance.
