Thinking about doing this to even out the wear on front seats. Are seats ambidextrous ? How difficult to change everything around. My seats don't have memory or heat.

You need to swap the seat wiring harnesses to make it work. The drivers harness is not the same as the passenger harness. You may also need to slightly cut the leather in each seat to make a hole for the adjuster switch.

Swapping the harness is not too hard. Other than that, no problems.

I have attempted this and only managed to swap the backrest. The seat was riveted to the frame rail and I couldn't see any way this can be swapped as well.

no...just swap the wiring harness. Don't do anything mechanical. With the seats out, you can carefully unhook the harness from the seat bottom and back and pull it out. Transfer it to the correct seat.
