Where can I order the correct material? How many yards do I need? Anyone sell a kit?

Man, you are not new to this business ;)
How much do you need?
Measure it. Usually what I buy from my supplier in German the width is fixed to be enough for any headliner.
Then it depends if you have a sunroof or not.
With sunroof you need more, as you cut a hole otherwise into the headliner material.
Usually I sell here in the japanese auctions
2 meters long for a standard E32/E34 E31 (actually too much, but they like it)
for a car without sunroof, and 2.5 meters for a car with sunroof.
That is even enough to make the A/B/C pillar.
