Going from the factory 15" basket weaves to some 17" rims w/235/45R17 tires, assuming 8"wide rims, what offset do I want? 15mm or 20mm? The factory 15" basketweaves are 20mm right?

20mm is the correct offset

I thought I see sometimes people using 15mm? Why would they, does the width of the rim have any bearing on the offset used?

On my 90 535i the offset is 20 mm, and wheel width is 7". There is not much clearance between the inner sidewall/shoulder of the tire and the spring perch on the strut. You'll want to triple check to make sure your proposed new wheel and tire will fit, with proper clearance of the strut, fender, caliper, etc..

It could be, that a given wheel may or may not work, depending on the geometry of the particular tire you mount on it, and vice versa.
