I use 50% or a bit more coolant. For track use plain water transfers heat better, there are also additives like Water Wetter to improve even further.
I have ocassion to work on real race cars and they all run plain water.
I am curious to find out what water to antifreeze ratio you guys run in winter vs. summer if any difference at all. Also I am looking for suggestions for when I go to the track.

If you are going to mix it and leave it in distilled is recommended. In the race cars it's whatever comes from the local tap.

Unless it's a dedicated race car just use a 50/50 mix. A well functioning stock cooling system is adequate.

I use 50/50 here and it gets to be -40 C in the winter, don't have any issues.
