Default Coolant level sensor? ...plus various other things...

*EDIT* It was level, not temp, I'm going insane.

Every time I turn off my E34 525, M20 (1989) I get the "coolant level, owners handbook" error, no matter how hot or cold the engine is, lol...
Do coolant temp sensors commonly go bad on E34s? What are your reccomendations? Also, sometimes i get rough idles once and a while when its cold that sort of go up, then down and stutter, up and down then stutter in intervals until maybe 30 seconds go by... Sometimes I have to give it a tiny nudge of the gas for a few secons to keep it even, or else the engine will die.
Also, once the engine dies, iit is very difficult to start again as I must hold the gas pedal completely down to start it, and sometimes I have to wait a bit and try it again that way and it will start... Any ideas?
    Thanks guys!

coolant level sensors fail commonly and are cheap and easy to replace, make sure first the plug is solidly connected and the terminals havnt corroded. As for the cold idle issue, can have many causes, pull the codes if you can and see if anything pops up. Failing that, its the usual suspects for pin point testing
