My car did this when I first got it. Cold start was ok but starting when it was hot it'd usually stall and if it didn't the idle would hunt for a while until it settled down. Took me a couple of weeks to figure it out.....but it became apparent when I reassembled after sealing the intake manifold gaskets.

Turns out the vac lines for the fuel pressure regulators where switched. The lines need to cross each other (see pic). Regulators got replaced too as both were starting to leak fuel into the vac lines. Hope your repair turns out to be as simple.
