I have an 83 633csi. I want to replace the timing chain and gaskets and adjust the valves at the same time. The car has about 110K miles on it and I'm the second owner. I know that it's been maintained very well over the years since I know the previous owner and the car has been garaged as well. Well anyway, what is involved in changing the complete timing setup and adjusting the valves. I have a shop manual, but it jumps around and the directions a very skimpy to say the least. Any insight would be helpful.

If it has been maintained as you say there should be no need for a t-chain yet. The Bentley manual well covers this if you decide to anyway.
Check the tightness of the bolts retaining the oil line that lubricates the rocker arms, they are known to loosen and cause oiling problems.
